Take the short pastry flavoured with Orange or Limoncello Pastafrutta - see also the preparation of the recipe " Orange shortbreads" - put it on small different stencils (or normal for medium pastries). Put inside the stencils small amounts of Mashed Apricot Selection, then bake for 15/20 minutes at 160° C in airy oven or at 210° C in static oven. Let the short pastry tartellettes cool, then take them out of the stencils. Cover each one with custard cream or Mashed Apricot Selection. Put on each tartellette an equal amount of Fruits of the Forest, Strawberries, Pineapple and Apricots Tuttafrutta (already strained for about 1 hour). To maintain a fresh colour and brightness, put jelly or icing sugar on top of the tartellettes.
